WE CHOOSE: Primitivo, Negroamaro, Nero di Troia, Aglianico, Susumaniello and Malvasia Nera.
WE LOVE: Vinification in red with maceration on the skins.
The different varieties are fermented separately in stainless steel vats at a controlled temperature for 12-16 days. The second fermentation, called malolactic fermentation and also the aging in wood take place in French barriques. When the wine reaches its maximum potential, the final blend is assembled. Bottle aging for at least 3 months.
TASTE IT: This extraordinary red wine is a rather recent expression of the potential of Pugliese viticulture. Born from the union of different autochthonous red grapes. Modern wine, well balanced and full-bodied. It has an intense dark purple color with a bouquet of ripe fruits, such as blackcurrant and blackberry, infused with toasted oak. It is soft on the palate, with a great concentration of luxuriant fruit, well balanced with its delicate, soft tannins. The structure and complexity are exceptional on the palate, tempered by excellent tannic extracts. This high-profile blend has obvious Mediterranean characteristics and a sunny character. Its grace and delicacy allow it to be drunk young, however, the wine has an extraordinary capacity for aging.
DRINK IT: 16 ° -18 ° C.
MATCH IT: Large roasts, braised meats, game and long-seasoned cheeses.
